    SERVES: 2

    TOTAL TIME: 10 minutes

    Ingredients

    227 g okra, small or medium, ends trimmed

    1/2 teaspoon (2 ml) sea salt

    2 teaspoons (10 ml) coconut aminos (or gluten-free tamari)

    1 teaspoon (5 ml) toasted sesame oil (or freshly pressed extra-virgin olive oil)

    pinch of ground white pepper (optional)

    Directions

    1) Bring a large pot of water to the boil. Once boiled, salt water and add okra. Blanch for 2 minutes. Using tongs, place in a bowl of ice water and let cool. Drain and place in a mixing bowl.

    2) Cut each okra in half diagonally.

    3) Mix the okra with coconut aminos, sesame oil and pepper. Serve at room temperature or chilled as a side dish. Garnish with roasted sesame seeds for an extra crunch!

    400 g shredded green and purple cabbage (you can use a pre-packed coleslaw mix!)

    1/2 small red onion, finely chopped

    1/2 cup (125 ml) cilantro, finely chopped

    1/4 cup (62 ml) freshly pressed extra virgin olive oil

    1/4 cup (62 ml) freshly squeezed lime juice

    1 tablespoon (15 ml) honey

    1/2 teaspoon (2 ml) sea salt

    Directions

    1) Mix all ingredients in a bowl. Mix to combine and chill in the refrigerator for 2 hours or overnight before serving!

    SERVES: 1

    TOTAL TIME: 25 minutes

    Ingredients

    2 large eggs

    200 ml chicken bone stock

    1 teaspoon (5 ml) coconut aminos

    2 teaspoons (10 ml) chopped green onions

    Directions

    1) Beat the eggs with the stock. Pour the egg mixture through a fine sieve to remove any bubbles into a 6-inch bowl. Cover the bowl with a tight-fitting lid or aluminum foil.

    2) Prepare a steamer basket with 2 inches of water and bring to the boil over medium heat. Place the bowl in the steamer and cover with a lid. Let it boil for 10 minutes, then turn off the heat and let it cook in the residual heat for another 10 minutes.

    3) Carefully remove the dish from the steam basket. Drizzle the coconut aminos over the silky egg custard and garnish with green onions. Enjoy immediately.

    SERVES: 1

    TOTAL TIME: 10 minutes

    Ingredients

    1/4 cup (60 ml) coconut flour

    1 teaspoon (5 ml) baking powder (use grain-free arrowroot powder for paleo)

    1 scoop (10 g) collagen peptides (optional for more protein! Add an extra tablespoon of milk)

    2 large pasture eggs

    1 tablespoon (15 ml) avocado oil

    2 tablespoons (30 ml) milk of choice (non-dairy milk for paleo)

    1 tablespoon (15 ml) maple syrup (or liquid maple sweetener for keto)

    Directions

    1) Sift the coconut flour, baking powder and collagen (if using) into a mixing bowl. Add the remaining ingredients and beat everything together until smooth and combined.

    2) Heat a frying pan or griddle over medium heat. Once hot, lightly grease the skillet with avocado oil or ghee. Pour the pancake mixture into the frying pan and smooth the batter with a spatula or spoon, as it is quite thick. Cook for 4-5 minutes on each side, or until golden brown.

    3) Serve immediately with your favorite nut or seed butter and fruit.

    SERVES: 4

    TOTAL TIME: 10 minutes

    Ingredients

    1 bunch broccoli rabe/rapini (cut ends off and cut in half lengthwise)

    2 tablespoons (30 ml) freshly pressed extra virgin olive oil

    1 shallot, finely chopped

    30 g raw pecans, soaked for 8 hours or overnight

    1/2 teaspoon (2 ml) sea salt

    2 teaspoons (10 ml) apple cider vinegar or lemon juice

    Directions

    1) Bring a large pot of water to the boil. Once boiled, salt water and add broccoli rabe. Blanch for 2 minutes. Using tongs, place in a bowl of ice water and let cool. Drain and set aside.

    2) Heat a frying pan over medium heat. Once hot, add the oil and shallots. Cook until soft, about 2 minutes. Add the pecans and fry for another 2 minutes. Finally, add the broccoli rabe, salt and vinegar. Cook, stirring often, until heated through, about 3 minutes. Enjoy straight away or mix with some sprouted quinoa, millet or cauliflower rice.
